Maple Butter Popcorn "Cookie Monsters"

Soft, chewy sugar cookies packed with crunchy popcorn.

3 cups Butter and Maple popcorn
1/2 cup butter, softened
1/2 cup light brown sugar
1 egg
1/2 tsp vanilla extract
1 1/4 cups flour
1/2 tsp baking soda
  • Mix butter + sugars until sandy.
  • Add egg + vanilla and stir smooth.
  • Add flour + baking soda and stir to make dough.
  • Fold in popcorn (squish gently - it fits!)
  • Scoop onto baking sheet.
  • Bake at 350°F (175°C) for 10-12 min.
